In the summer, we get so many great vegetables. This is a great and healthy way to use them up.
Pick out the vegetables you wish to grill, wash, cut and put in a bowl.
Drizzle olive oil over vegetables.
Sprinkle Greek Rub over vegetables (I never measure, I just make sure that all of my vegetables are lightly coated)
Mix everything together to make sure all vegetables have oil and seasoning on them.
Throw vegetables in a grilling basket and toss on the grill.
It doesn't take long on the grill, pull off of grill when vegetables are cooked through.
